Cellar Soup: A Hearty Potato Soup for Winter

Growing up on the Canadian plains during the Great Depression, your dad learned to stretch the simplest ingredients into comforting meals. Winters in Saskatchewan were harsh, and with a family of 12, they relied on their own vegetables and basic pantry staples. One of his favorites was a humble potato soup called “cellar soup,” a recipe your grandma often made. This soup is more than just food; it’s a reminder of family warmth and the comfort of a simple, nourishing meal.

Ingredients for Cellar Soup:
8 cups diced potatoes (Yukon Gold or any other variety)
1 cup finely diced onion
1 cup grated carrot
1/4 cup butter
Salt and pepper, to taste
Water (enough to cover the potatoes and vegetables)
Optional: milk or cream (for added creaminess)
Optional: cheese (cheddar is a great choice for extra richness)
