Made this soup with coconut milk, red curry paste, chicken broth, rotisserie chicken, half an onion, ginger, garlic, lime juice, basil, scallions, cilantro, and rice noodles!! My idea sprang from a panang curry dish my mother with make with red curry paste, coconut milk, onions, and potatoes. I was craving this and pho so I decided to mix the two dishes!. Here’s a possible recipe inspired by that style:
INGREDIENT :
1 can (13.5oz) full fat coconut milk
4 tablespoons red curry paste
4 cups chicken broth
2 cups water
2 cups rotisserie chicken
Half a yellow onion (you can use sweet if you prefer it with the curry taste)
1 tsp ginger
3 cloves minced garlic
Handful of fresh basil
Handful of cilantro
Handful of scallions
Juice of two limes
