Recipe for Creamy Meatball Tortellini Soup
Ingredients:
- Meatballs:
- 1 lb ground beef (or a mix of beef and pork)
- 1/4 cup breadcrumbs
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tsp Italian seasoning
- Soup Base:
- 2 tbsp olive oil or butter
- 1 onion, finely diced
- 2-3 garlic cloves, minced
- 2 carrots, sliced
- 1 cup mushrooms, sliced
- 1 tbsp tomato paste
- 1/2 tsp paprika (optional)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 package (9 oz) cheese or meat tortellini
- 1/2 tsp dried basil (or use fresh if available)
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (for serving)
